Easy-Peasy Peas Soup

This has got to be the easiest of soups to prepare from start to finish. Literally just throw all ingredients in the pot. Hence the name easy-peasy. It’s tasty and full of the good nutritious stuff we need. No kidding! By the way, it’s also inexpensive!

Ingredients

500 gr Frozen green peas

1 1/2 cup vegetable broth

1 1/2 cup water

3 tbs Coconut oil

2 chopped shallots

Chopped mint

Hand full chopped parsley,

Salt

Pepper

Method

Heat the coconut oil in a pan then add shallots and sauté over medium heat for around 3 to 5 minutes or until tender. Add the water and vegetable broth and allow to cook until the peas soften. This takes a few minutes. Add mint and parsley and let it cook for two more minutes, maybe two minutes. Add salt and pepper to taste.

Once cooked, remove from heat and puree the soup in a blender to a smooth consistency.

Garnish with chives, optional.

This soup can be enjoyed chilled or hot. Bon Appetit!

    This recipe sounds really healthy. I get kind of freaked out by green liquid-ish foods. I haven’t been able to talk myself into adding green veggies into my smoothies yet, but I hope to get over it soon! I love that this soup is vegan!
